Spicy soft tofu stew

Firm tofu is made by grinding down the soaked soybeans to make soybean water,which is boiled and combined with seawater before it's poured into a square mold. The mold is then pressed with heavy weights to force the tofu into a square shape. Sundubu (soft tofu) is made without seawater and so a seafood broth is essential for the best sundubu jjigae. Top with an egg for an extra hearty stew.
