Chives Tofu Dumpling

Chives Tofu Dumpling is a summer dish that originated from the royal court of the Joseon Dynasty. It is also called haesam mandu (sea cucumber dumpling) due to its wrinkled, sealed shape resembling that of a sea cucumber. A hot weather dish, it tends to be served simply, usually accompanied with only vinegar soy sauce or sometimes in a bowl of chilled broth. The main ingredient of the filling is cooling cucumber, which helps to replenish the body with moisture lost in the heat.
